Ingredients

  • 250 g chocolate wafer cookie crumbs Finely ground, about 2 1/2 cups
  • 85 g unsalted butter Melted and cooled slightly
  • 25 g granulated sugar For the crust
  • 225 g dark chocolate 60 to 70% cacao, finely chopped
  • 900 g full-fat block cream cheese Softened to room temperature
  • 200 g granulated sugar For the filling
  • 45 g unsweetened cocoa powder Sifted
  • 0.5 tsp fine sea salt For balancing the chocolate flavor
  • 180 g full-fat sour cream At room temperature
  • 2 tsp pure vanilla extract For the filling
  • 4 large eggs At room temperature
  • 170 g dark chocolate 60 to 70% cacao, finely chopped, for the ganache
  • 120 ml heavy cream For the ganache

Equipment

  • 9-inch round springform pan with 3-inch sides
  • Heavy-duty aluminum foil
  • Large roasting pan
  • Food processor
  • Stand mixer with paddle attachment or electric hand mixer
  • Large heatproof bowl
  • Fine-mesh sieve
  • Flexible silicone spatula
  • Small saucepan
  • Instant-read thermometer, optional
  • Thin sharp knife

Method

  1. Position a rack in the lower-middle of the oven and heat it to 350°F. Lightly grease the base and sides of a 9-inch springform pan. Wrap the outside in two wide layers of heavy-duty foil, bringing the foil above the base seam without tearing it. Set the wrapped pan inside a large roasting pan and bring a kettle of water to a boil for the later water bath.
  2. Combine the finely ground chocolate wafer crumbs, melted butter, and 25 g granulated sugar in a medium bowl. Stir until every crumb looks evenly moistened and the mixture holds together when squeezed. Press it firmly across the pan base and about 1 inch up the sides, using a flat-bottomed cup to compact it. Bake for 10 minutes, cool on a rack for 15 minutes, then reduce the oven to 325°F.
  3. Melt 225 g chopped dark chocolate in a dry heatproof bowl over barely simmering water, stirring until smooth. Remove it from the heat and cool for about 10 minutes, until fluid but no longer hot. Beat the room-temperature cream cheese with a paddle on medium-low speed for 2 minutes, scraping twice, until smooth. Add 200 g sugar, sifted cocoa, and salt; mix on low just until uniformly dark with no cream cheese streaks.
  4. Mix the sour cream and vanilla into the cream cheese base on low speed until smooth. Add the eggs one at a time, mixing for about 15 seconds after each and scraping the bowl after the second and fourth eggs. With the mixer still on low, stream in the cooled melted chocolate and stop as soon as the batter is evenly colored and glossy. Pour it over the cooled crust, then tap the pan gently twice to release large air pockets.
  5. Place the roasting pan containing the springform pan on the oven rack. Carefully pour boiling water into the roasting pan until it reaches about halfway up the springform pan. Bake at 325°F for 65 to 75 minutes. The outer 2 1/2 inches should look set, while a roughly 3-inch center circle should wobble together when nudged, without sloshing. An optional thermometer inserted just off-center should register about 150°F. The center must not appear like wet batter.
  6. Turn off the oven, prop the door open about 2 inches, and leave the cheesecake in the water bath for 45 minutes. Transfer the springform pan to a wire rack, remove the foil, and cool for another 75 minutes, until no longer warm. Run a thin knife around the edge without releasing the pan. Cover without touching the surface and refrigerate for at least 8 hours, preferably overnight, so the filling becomes fully cold and cleanly sliceable.
  7. Place 170 g chopped dark chocolate in a heatproof bowl. Heat the cream in a small saucepan until steaming with tiny bubbles at the edge, then pour it over the chocolate. Rest for 2 minutes and stir from the center outward until glossy. Cool for 10 minutes, spread over the cold cheesecake, and chill for 20 minutes. Release the springform ring. Cut 12 slices with a thin knife dipped in hot water and wiped dry between cuts.

Notes

  • Use cream cheese, sour cream, and eggs at room temperature. Cold ingredients resist emulsifying and encourage lumps long before the batter becomes smooth.
  • Scrape the mixer bowl and paddle frequently, especially before adding the eggs. Unmixed cream cheese often hides at the bottom and later appears as pale lumps.
  • Keep the mixer at low speed once the eggs enter. A fluffy batter may look appealing, but excess air can make the cheesecake rise dramatically and contract as it cools.
  • Judge doneness by movement rather than waiting for a rigid center. A cohesive wobble will set during gradual cooling; a center that ripples or sloshes still needs more oven time.
  • For polished slices, chill the ganache until set but not rock-hard. Heat and wipe the knife before every cut instead of dragging crumbs and filling through the next slice.
