Bakery-Style Fudgy Brownies

Bakery-style fudgy brownies deliver bold chocolate depth, a dense, truffle-like crumb, and crackly tops. Real dark chocolate, minimal flour, and patient cooling ensure sliceable perfection. Crisp edges and a plush, moist center await in every bite.

Ingredients

  • 170 g unsalted butter
  • 170 g dark chocolate 60–70% cocoa, chopped
  • 250 g granulated sugar
  • 3 large eggs room temperature
  • 2 tsp vanilla extract
  • 85 g all-purpose flour
  • 30 g unsweetened cocoa powder
  • 0.5 tsp fine salt

Equipment

  • 1 8-inch square metal baking pan
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Rubber spatula

Method

  1. Heat the oven to 350°F (175°C) with a rack in the center. Line an 8-inch square metal baking pan with parchment, leaving an overhang on two opposite sides for lifting. Press the parchment into the corners so the batter can spread evenly. Use the specified pan size: a wider pan produces thinner brownies and changes the baking time.
  2. Place the 170 g butter and 170 g chopped dark chocolate in a heatproof bowl over a saucepan of barely simmering water. Keep the bottom of the bowl above the water and stir gently until the mixture is smooth, with no remaining chocolate pieces. Remove the bowl from the heat and let the mixture cool until warm rather than hot. Gentle heating limits scorching; cooling before combining protects the eggs from the hot mixture.
  3. In a mixing bowl, whisk the 3 large room-temperature eggs with 250 g granulated sugar for about 2 minutes, until slightly thickened and evenly blended. The mixture does not need to form a stiff foam. Whisk in 2 tsp vanilla, then gradually add the warm chocolate mixture while whisking. Scrape the sides and bottom of the bowl and mix until the batter is uniform, without oily streaks. Dispersing the sugar and bringing the fat and egg mixture together evenly helps produce a cohesive batter.
  4. Sift 85 g all-purpose flour, 30 g unsweetened cocoa powder and 0.5 tsp fine salt over the chocolate mixture. Use a flexible rubber spatula to fold from the bottom of the bowl up and over the batter, rotating the bowl as you work. Stop as soon as no dry pockets remain, checking the bottom where flour can collect. Avoid prolonged beating after the flour is added. Scrape the thick batter into the prepared pan and spread it evenly into the corners.
  5. Bake on the center rack for 28-35 minutes, beginning the doneness check at 28 minutes. The edges should be set, and the center should no longer look liquid. Insert a toothpick near the center: it should carry moist chocolate crumbs without wet batter. If wet batter remains, bake a little longer and check again. Use these cues alongside the time range because ovens vary; do not deliberately leave a raw center or continue baking until the crumb becomes dry.
  6. Place the pan on a wire rack and leave the brownies in the pan for at least 90 minutes, continuing to cool if the center is still warm. The crumb is fragile while hot, and the fats firm as it cools, making the squares easier to lift and cut. Once cooled, lift the slab using the parchment overhang and place it on a cutting board. Cut into 16 squares with a sharp knife, wiping the blade between cuts rather than dragging accumulated crumbs through the next slice.

Notes

  • Weigh flour and cocoa for accuracy. Even small excess dries out the brownies. Use spoon-and-level if you must use cups, never scoop.
  • A metal pan gives the best texture and edges. Glass and ceramic need longer and heat differently, so monitor doneness closely.
  • Don’t cut until fully cool, the center must be set for clean slices. If cutting early, expect much stickier edges.
  • If swapping chocolate, stay near the 60-70% cocoa range. Higher cocoa means more intense, less sweet, and drier brownies unless you adjust sugar and fat.
  • Store in an airtight container at room temp for three days. For longer keeping, wrap and freeze individual brownies, then thaw at room temp for best texture.
